This programme is divided into 3 segments as follows:

(ii) Other means to prevent deterioration of food
(iii) Food colours
(iv) Flavouring
2. Rules for using food additives
In this segment, the spokesman for Food and Environmental Hygiene Department introduced the rules for using food additives and explained that the Public and Municipal Services Ordinance of Hong Kong imposes strict controls on the types and quantity of food additives permissible in food.
3. Fresh food processing
The process of fresh food processing was filmed at the Fresh Food Centre of Wellcome at Tseung Kwan O Industrial Estate. The spokesman explained various procedures in the processing of fresh food.
